The chefs had a great time making delicious Artichoke Spinach Dip and then eating it!

This week in Kids Cooking Enrichment we made a delicious Artichoke Spinach Dip.  We talked about what an appetizer is . The young chefs chopped the artichokes, grated the cheese and used a garlic press.  They mixed the ingredients and then cooked it in the pan.  Most of the chefs really enjoyed the dip.  The recipe is below if you would like to try it at home. It is a ‘copy cat’ Applebees recipe. We also read a fun book called “Artichoke Boy” by Scott Mickelson.

Easy Spinach Artichoke Dip

Easy homemade dip from scratch and its delicious! It’s gluten free!

Ingredients:

-8 oz cream cheese                            -1 cups spinach

-1/2 cup sour cream                            -4 garlic cloves minced

-1 cup parmesan chese shredded       -1/4 teaspoon cayenne pepper

-1 cup mozzarella cheese shredded    – 1/4 teaspoon salt

-14 oz artichokes-chopped from the can

Instructions:

1- In a medium pan, combine cream  cheese, sour cream, parmesan cheese, mozzarella cheese, and stir over medium heat until cheese melts.

2- Stir in cooked spinach and chopped artichokes and cook for 2 minutes over low-medium heat until everything is well combined and creamy.  Stir in minced garlic and remove from heat.

3- Season with pepper and salt to taste.  Enjoy!
